Kalamata hummus
- Ingredients:
2 cups zucchini (we used the leftover “hearts” of the zucchini after making “pasta”)
1/3 cup sunflower seeds
2 cloves garlic
1 TBSP white vinegar (or lemon juice)
1/4 cup olive oil
2 TBSPS tahini
1 tsp salt
1/4 cup kalamata olives (not more otherwise it will get bitter)
paprika to taste.
- Directions:
1. Process sunflower seeds until powder and set aside.
2. Process remaining ingredients until smooth and then slowly add sunflower “flour” until creamy.
