Asian Carrot Avo Salad

- Ingredients:
4 large carrots chopped
1 avocado
1/2 cup cilantro chopped
1/4 cup parsley chopped
2 green onions chopped
2 TBSPS sesame seeds
juice of 2 limes
2 TBSPS flax seed or olive oil
1 TBSP soy sauce or braggs
1 tsp grated ginger
salt and pepper to taste
- Directions:
1. Process carrots to little chunks (kinda like grated) and mix in a bowl with cilantro, parsley, avocado, green onions, and sesame seeds. Set aside.
2. Blend lime juice, oil, soy sauce, ginger and salt and pepper until smooth, add to carrot mix and combine well.
3. Let sit for 10-20 mins so veggies get a little softer and serve.
