Breakfast Scramble with Zucchini Chips

- Ingredients:

1 cup nuts (almonds or cashews or whatever you like)

1/2 cup sunflower seeds

salt and pepper to taste

1 tsp turmeric

1/2 cup water

1 chopped tomato

1 green onion chopped

1/2 bell pepper chopped

1/2 avocado chopped

bunch of cilantro

1 zucchini cut into “chip” size.

- Directions:

1. In food processor process nuts and seeds until ground. Add spices and water until “scramble” consistency. Put in a bowl.

2. Add the chopped veggies to the scramble, mix and serve on a bed of spinach.
