Mexican Ceviche

- Ingredients:

1 young coconut julienned

juice of 2 limes

1/2 cucumber julienned

1/2 red bell pepper julienned

1 tomato chopped small

1/4 cup chopped red onion

1 small avocado chopped

1 small seeded and chopped jalapeno

2 cloves garlic minced

chopped cilantro (about 1/2 cup)

2 nori sheets chopped

1 tsp oregano

splash coconut water

salt and pepper to taste

- Directions:

1. Combine all ingredients in a bowl and marinate for 1 hour.

2. Serve as a side or with chips.
